Bagel and Tofu
Tofu is a great source of protein for vegans; Bagel provides a powerful combination of carbohydrates, proteins and Avocado is packed with micronutrients and all the good fats. We have perfectly balanced the nutrition the Fitfoody way, as a result the this recipe is packed with nutritious 450kCal which will keep you fuelled for long mornings. This is vegan breakfast can be prepared in short time. Spice it up with this scrambled Tofu version, which can be served with Bagel as described in this recipe. This is the simplest version of this recipe for those who wants to make something quick.
Create some variety by adding some chop tomatoes or herbs or spice for variation.
Mash the Tofu with a potato masher. Alternatively use a fork to crumble the tofu
Peel and chop the onion finely
Finely chop the green chilli
Heat a frying pan and add 1tsp of coconut oil
Sauté the onion for 5 minutes in low-heat until it turns soft and then add the green chilly.
Add turmeric & salt and Stir
Add the crumbled tofu to the pan and cook for 6 minutes. Transfer the content to a clean bowl
Cut an avocado in half and spoon out the flesh
Cut a bagel in half. Spoon the scrambled tofu onto the bagel half
Top it up with slices of avocado and sprinkle with coriander leaf
Finally place other half of the bagel on top and serve
